
I found this really interesting concept at Whole Foods when I was there last week. They make cultured coconut milk, that tastes like yogurt and is non dairy….
I was slightly skeptical when I opened the carton…it looked a bit translucent and watery at first. After I mixed it up though, it started to look pretty much like yogurt except it was a little more transparent. The amazing part came after I tasted it. It was like an explosion of tart, coconutty, milky goodness. Slightly sweet from the coconut, and slightly tart like plain yogurt it was an interesting mix of flavor.
Granted, that because it is made out of coconut milk, which is not known to be particularly low in calories, the yogurt has about 130 calories per container. This is a good option for those trying to go either dairy or gluten free as it has both of these features.
The real reason I opened it though, was because I was trying to make banana bread and I didn’t have any plain yogurt. I though that the banana and coconut flavors would go well together so I subbed in the coconut yogurt for the regular dairy kind.

The bread turned out great! It was a little crusty on the outside and moist and tasty on the inside. The addition of some blueberries, whole wheat flour and some cinnamon on a classic recipe really made a big difference!
