I don’t know if any of you read hugrygirl but she loves Almond milk. After reading about it on her website, I have fallen in love. Almond milk is very similar to soy milk, but made from almonds. AND if you get the unsweetened kind, it also has about 40 calories per 8oz compared to 90-110 for 8 oz of soy milk.
I eat it with blueberries every morning for breakfast and it is fast and filling. Since it is made from nuts it also helps you cut back on dairy, which means that I am one step closer to being a vegan. (Although I dont know that I am willing to give up cheese….)
I used it last week to make chocolate ganache instead of cream and it worked perfectly! I havent tried using it in baking yet but I will let everyone know once I do. I really enjoy the flavor and I think that it tastes better than soy milk, although I’m not sure that I’m ready to down a glass of it quite yet.
Last, but not least, is that it comes in shelf ready packaging so it doesnt go bad until you open the box. I usually buy a box or two when its on sale and it can sit in my cupboard for up to a year, depending on the expiration date. Just make sure you buy the smaller boxes if you don’t use it too often! It does need to be used within 7 to 10 days of opening!
