1. Got Bread?

    My mom had a party again this weekend (I swear she has more of a social life than I do…) and we had tons of leftovers. People didn’t eat anything but dip! Whats up with that? Anyway, we had to think of some things to do with the 2 loaves of leftover bread we thought people would eat.

    Sandwiches are always great for leftovers but at some point you have to get tired of the same sandwich for 3 days straight. My favorite thing to do with leftover bread is to make croutons. Just toss some oil and salt on some bite-sized pieces and throw them in the oven until they get brown and crispy. If you keep the croutons in a zip-lock bag they will keep for up to a week.

    I’m not a huge croutons on salad person but I love eating them just as a snack or with your favorite bowl of soup. We make a great spiced chick-pea and fire-rosted tomato soup that is perfect with croutons.

    Indian Spiced Chickpea soup

    1/4 cup olive oil 2 cloves garlicĀ  1 onion 26 oz chick peas2 tsp cumin 1/2 tsp turmeric 1/2 tsp cardamom 2 cups vegetable broth 28 oz canned tomatoes

    Saute the garlic and onion in the olive oil until soft. Add the other ingredients and bring to a boil. Remove the pot from heat and either blend in portions in a food processer of blender. Serve with croutons and plain non-fat yogurt.
