Peas and Quinoa stir-fry:
This is a great way to get some fiber as well as fresh veggies. Cook the Quinoa according to the package directions, (either with water or vegetable stock). Heat a little bit of olive oil in a pan and saute some onion and garlic until fragrant and the onion is soft. Add sugar snap peas, fresh shelled peas, and whatever other vegetables you want and cook until crisp tender. Add qunioa, mint and lemon juice to the vegetables and cook unitl heated through.
