The chef at my sorority house used to make the best asparagus frittata for breakfast in the mornings. It was my favorite!
Its not the best thing thing for your waistline but its sooooo yummy I couln’t resist.
This recipe is not exactly the same as our chef used to make but it’s still pretty good.

I changed it a to be a bit more like the one back at my sorority house by using Parmesan cheese and mixing it in with the eggs before cooking them. That makes the entire frittata cheesey and good throughout the eggs. Also, by using a strong flavor, salty cheese like Parm, you don’t need to use as much cheese which means less calories and fat.
